Carrot Thoran


Ingredients

Carrot-250gms

Small onions-10nos

Green chillies-2

For the masala

Coconut scrapping-1/2cup

Cumin powder
Turmeric powder

Chilly powder-1/2tsp

Garlic

Oil-2tsp

Salt

For seasoning

Mustard seed-1/2tsp

Split urad dal

Curry leaves

Method

  1. Chop the onions and green chillies.
  2. Chop(do not grate) the carrot into fine cubes
  3. Heat oil in a kadai and add the mustard seed and urad dal.
  4. When the mustard seed have spluttered and the urad dal turns golden, add the chopped onions and green chillies.
  5. Next add the chopped carrot ,salt and turmeric .
  6. Cover and cook in low flame for 5mins.
  7. Meanwhile mix the grated coconut,chilli powder, cumin powder and crushed garlic.
  8. When the carrot is cooked, add the coconut mixture and mix well
  9. Keep covered and cook in low flame for 2mins.
