Mixed Vegetable Kurma


Ingredients
Mixed veggies(carrots,potatoes,beans,green peas,cauliflower)-2 cups
Green chillies-3
Ginger-garlic paste-1tsp
Coconut-3tbps
Saunf-1tsp
Cashews – 3 whole

Method
  1. Dice the vegetables to an uniform size.
  2. Heat oil in a pressure pan and sauté the ginger-garlic paste till the raw smell disappears.
  3. Now add the vegetables, green chillies and sauté for 2minutes.
  4. Then add half a cup of water and a little salt.
  5. Cook for 5 minutes till the veggies become tender.
  6. Grind coconut, cashews and saunf to a fine paste
  7. Add this to the vegetables and cook till it starts boiling
  8. Remove from fire and garnish with coriander leaves.

Chow-chow/ chayote kootu



Ingredients
Chow-chow –2 nos
Small onions-10 nos
Channa dal-2tbsp
Turmeric powder
To be ground  into a fine paste
Coconut-3tbsp
Red chillies-3
Garlic-3 pods
Cumin seeds-1tsp
Urad dal-2tsp
For tempering
Mustard seeds
Curry leaves
Red chillies
Oil-3tsp
Salt-to taste

Method
  1. Soak channa dal for about  20 mins and then boil with little salt till it is just cooked but not mushy.
  2. Dry roast  red chillies,urad dal,garlic and cumin seed and powder them in a mixie
  3. To this add the grated coconut and grind to a smooth paste
  4. Chop the chow-chow into small cubes and boil with a little salt
  5. Heat oil in a kadai and add mustard seeds,red chillies and curry leaves
  6. To this add the onions each cut into 4 pieces length-wise
  7. Next toss the boiled vegetables in to the kadai and sauté for a minute
  8. Add the masala paste,boiled dal and allow it to boil
  9. Tastes homely with steamed rice and rasam .With papad you can call it awesome.

Koorka Fry

I got to taste this vegetable while i was in Cochin where they call it Koorka.It is a weird ,muddy looking vegetable.But its taste beats all the first impressions it received.This one tastes equally good with any curry be it rasam or sambar or morukulambu or a simple curd rice.
Ingredients
Koorka(Chinese potato) – ½ Kg
Red chilli powder-approx 2tsp(adjust as per your taste)
Turmeric-1/2 tsp
Oil-2tbsp
Salt to taste


Method

  • Wash and pressure cook the Chinese potatoes with a little salt ,peel and cut into thick slices
  • In a dry vessel ,make a dry mixture of the chilli powder, turmeric and  required salt(judge after checking the saltiness of the boiled koorkas).
  • Toss the moist koorka chunks in the masala and keep aside.
  • Heat oil in a kadai and add the marinated koorka and fry in a medium flame till golden and crispy on the surface.
  • Now add a few curry leaves and fry for another 5 mins and now its ready.
