Koorka Fry

I got to taste this vegetable while i was in Cochin where they call it Koorka.It is a weird ,muddy looking vegetable.But its taste beats all the first impressions it received.This one tastes equally good with any curry be it rasam or sambar or morukulambu or a simple curd rice.
Ingredients
Koorka(Chinese potato) – ½ Kg
Red chilli powder-approx 2tsp(adjust as per your taste)
Turmeric-1/2 tsp
Oil-2tbsp
Salt to taste


Method

  • Wash and pressure cook the Chinese potatoes with a little salt ,peel and cut into thick slices
  • In a dry vessel ,make a dry mixture of the chilli powder, turmeric and  required salt(judge after checking the saltiness of the boiled koorkas).
  • Toss the moist koorka chunks in the masala and keep aside.
  • Heat oil in a kadai and add the marinated koorka and fry in a medium flame till golden and crispy on the surface.
  • Now add a few curry leaves and fry for another 5 mins and now its ready.
